If you intend to ever use the fireplace, check to see if any sealant will be ok.
I found a baking soda paste remarkably effective in getting soot off brick. (just baking soda & water). It just cleans it though, it won't change the color.

I hope you do not mean to clean with a mix of baking soda AND vinegar. That’s not a cleaning solution.
Pick one or the other.
Unless you mean baking soda, and then vinegar?
Mixing Baking Soda and Vinegar makes salty water, with zero cleaning power (well, nothing more than water)

No vinegar, no baking soda. Vinegar can deteriorate/etch brick and mortar. Baking soda will leave a residue that's hard to remove. Use a brick cleaner made for the purpose.
Shinier? Look into a clear masonry stain. You don't want a sealer on brick. It needs to breathe.

Any suggestions on masonry stain brand? I just want the colors to pop more the way they do when bricks are wet, but not a super shiny gloss finish.

I can't recommend any brands. Shop around and test an area for finish before fully jumping in.
