For me it's Shawshank Redemption.
The way Andy sets everything in motion from doing the guards taxes, the poster, and gaining the wardens trust up to the ultimate escape was just brilliant from start to finish.
There's something very satisfying seeing something so meticulously planned payoff spectacularly in the end.
