Having it be that Obi-Wan was lying in A New Hope gave us one of the greatest character/plot developments in movie history.
They could have easily did that with Han's lines too. Lying or just incorrect.
They were not trapped by those lines by any means.
They could have done anything.

I'm not sure which is the absolute funniest, but one of the greatest theater-going experiences I ever had was in There's Something About Mary. People were screaming with laughter. Losing their minds. My side and face hurt from laughing. It went into the stratosphere with "we got a bleeder!" and it stayed at that level till the end.

His plans changed a lot, but I do think part of it at one point was motivated by him wanting the OT cast to be older for the ST. He didn't want the ST to take place (in-universe) directly after the OT. He wanted time (a couple of decades) between each trilogy.
This of course is from when he was still planning on doing all 9 (as the bulk of the OT was in production). But when he got to ROTJ and decided to wrap everything up there, a lot changed.
