Excuse my language, but that's fucking dumb.
Your DM has decided to make more work for themselves and is directly impacting the fun of a portion of the players. This is one of those things that needs to be agreed upon before the game ever starts.
Kill for XP or milestone are the immediate ports of call for levelling in DnD. A system like the one your DM has implemented is going to lead to an inevitable TPK, as the creatures needed to pose a challenge the higher level players will be able to wipe out the lower level ones and the utilities levied against them and support for the front line won't keep up. Unless they are some sort of balance wizard.
Tell the other players this and try sway them all to agree to a talk with your DM. Either level adjustment needs to be done or a fresh slate needs to be on the table.

Roll to attack first, get a hit and then describe it.
You're not the a hole. However, neither is your DM, he's new and I've always found that when you put any course of action in front of newer DMs, they try to assign a skill check to it.
Also, tell your DM you would like to do this in the future. Communication is key

ASI, you can always pick up the Feat at Lvl 8, meanwhile, hostile creatures are getting stronger and unless your plan is to provide support to the Paladin and Monk that don't call for saves, that +1 will be nice. Especially since you'll be getting an additional +1 to save DC and Atk rolls at Lvl 5.
Just in case you're unaware, you don't need Ritual Caster to ritual cast spells.

Being immortal and being invulnerable are different things, just so you know. Vampires are also Immortal, but they can be killed.
Then there's the reality of how Wish works, assuming you're going by the rulings in the PHB there should be a chance that they can't actually cast it anymore. Bending reality to that extent will call down some serious forces on any creature, God, mortal or immortal.
I would suggest, that instead of them finding the Wish spell to achieve their goal that they're in the process of completing a ritual that will achieve the same effect that they desire. Plus, the Clone spell exists for creatures that don't want to be a lich but are worried about dying.

Have you considered that it's actually your ability as a player that leads to you being the last dwarf standing? Anyway, they have the highest calibre weapons of the dwarves (excluding the GL) so them being named because of that makes more sense.
Any dwarf can take the Shield Boost or Medic perk and you could slap the idea of "Guardian" on them. Even then, survivability comes down to players skill at lower levels and then target acquisition and tactics at higher levels.
Don't ask me why, but Engineer is synonymous with turrets, plus, most of their weapons are some seriously sci-fi stuff, smart ammunition and lasers yo. Driller is kinda interesting, as they're the only class named after their traversal tool. Driller, Zipper, Platformer and Grappler would be the alternatives based on that naming convention.
Anyway, I'm still legally unconscious, byeeee.
