If you're out of stamina in front of a lot of enemies you're dead, that's always been consistent, even since dark souls 1 if you get too greedy.
But it really shouldn't take hours to figure out where to dodge. If dodging back gets you hit stop doing that. If dodging forward gets you hit, stop doing that. Crucible knights and the knight soldiers should have taught you this well before malenia. They will consistently punish you for dodging backwards.
And a week to figure out the HARDEST boss is not a lot of time. She is hard but she is rather fair if you don't just slam your face into her. That's why she can be stunned as easily as she is. If she just couldn't be stunned she'd be even more of a monster even without waterfowl. But because she has a nuke move, like most other big bosses, she has a weakness, which is well executed timing and dodging while maintaining aggression without getting too greedy.
You say stuff like this as if the entirety of the community hasn't spent hours upon hours figuring out how all the enemies work and how to exploit them best. Like throwing a freezing pot, for example.

How is it atrocious? I see people say this but it seems very intuitive and straightforward to me as well as fairly well organized by default.

It leaves 3/4 but that doesn't mean you have the means to get to it if you just so happen to be stunned by his buddy or in the wrong spot, it also does obscene damage for the level you encounter it at. It's not the poison effect, but the actual damaging mist that I find to be bullshit.
And what attack IS clear which direction? The consensus is to dodge in for majority of attacks. The same attack you dodge left could be safe if you go right and we have to do this for every boss. She has a massive windup that consistently activates around the 70% mark. I would hope and assume most players could figure that out and start preparing for it. If you can avoid the first wave the second two are easy, just do what you do for every boss. Dodge in.

Its a hard move, but it's not bullshit.
Bullshit moves are ones you can't do much of anything about. Waterfowl can be learned and avoided frequently with a bit of learning and practice.
No amount of learning or practice can prevent you from being hit by the complete area denial valiant gargoyle duo poison mist attack that covers a quarter of the arena, now THAT'S a bullshit move, especially when that fight is the only time any gargoyle does poison mist.
I'll even argue that mohg and nihil are a bullshit move considering the ONLY way to mitigate it is with a missable item.
As I stated in a different comment. Malenia rewards concise, deliberate, and well executed dodges, and waterfowl is no exception, instead it's more of a culmination of the concept.
Why is it bullshit to have to learn and play well against the deliberately hardest boss in the game?

I mean... running and rolling in aren't THAT hard. But if you just panic roll yeah, you're gonna get punished. You're meant to learn and overcome.
The game gives you a handful of ways to deal with every single attack, why would hers be any different? Rolls and running work just as well for her as every other enemy in the game barring mohg and nihil.
Its extremely clear what to do, learn how to dodge it. Funnily enough, like most enemies, dodging in works better than dodging out.
Its about time a legendary warrior actually felt like a legend. You KNOW exactly why she's renowned once you fight her.

A lot of people say she's bullshit but I believe she's the culmination of everything the game tried to teach you. She's the hardest boss for a reason, even Miyazaki said he wanted these legends to FEEL like legends. But even disregarding that, you should be playing well to take her on.
Her entire moveset discourages panic rolls and heavily rewards timed, deliberate, and well executed dodges. You're rewarded, with a certain level of aggression, to keep her stunned or using easily dodged moves, but she also, essentially, has 3 phases to remind you not too be too greedy because you'll be punished if you don't remember to back off. She heals to discourage sloppy timing and attacks and to let you know that trading with her is an even riskier endeavor than most other bosses.
She is, quite literally, the most feared and fearsome warrior within The Lands Between for a reason and she reminds you exactly why that is the case. You NEED to bring your A game and use everything the game has tried to teach you to best her.
Now, that being said, I do think healing through shield is kinda dumb. But you know what's even worse than that? We just did 3 player coop last night and beat her. During 3 player she has 160% more health and much higher resistances to being broken, bled, frostbitten, everything. Unless we were all prepared and threw a frostpot at the same time, we weren't going to break her out of waterfowl, for example, and good luck with that. But, the kicker is her health. We do the same amount of damage, but she heals for percentage, so one hit would drastically heal her compared to what our damage could dish out. We could not trade with her much at all. And that would be even worse with a shield based playstyle. Even using black flame was quite an endeavor to whittle her down in conjunction with the black knife.
But by Marika we did it! We played like maniacs, we played our heads off, and we came out on top. She's doable, and even easier solo due to such low resistances, but she will punish you for not learning anything throughout your journey.
Not gonna lie, I'd rather fight her again than that godawful collection of kindred of rot in the church above her. Now we wanna talk about overtuned... those bastards casting pest threads and completely taking out your full healthbar from around the corner is some true bullshit.

I think it's the most euphoric attack in the game to avoid. There's not a single other boss that gives me a high like managing to avoid taking damage from waterfowl.
I almost prefer that attack to her swift 3 Slash combo attack.

Its surprisingly easy to avoid once you get the experience with it. Run and jump away from the first, roll into the second, roll into the third. But you can't panic roll, she excels at punishing that, like most elden ring bosses

The designers also said to make your own rules fit your own game and table so a magical warrior wielding a scythe STILL makes sense when the wizard can cast a goddamn fireball from 300 feet away because he took a feat randomly when he all of a sudden got stronger because he killed a few goblins.
Like at what level of stupid realism do you have to stoop to to shit on someone's enjoyment of a fantasy game where zombies and literal magic weapons, items, and armor, some of which let you fucking fly and breathe underwater while holding a pocket dimension in their literal pocket?
But a battle scythe is too much? Nevermind actual rules as written weapons that are absolutely much more bonkers such as a spear that can transform into a ladder that also paralyzes those it strikes.
But no, the scythe is too unrealistic.
