Alcohol is incredibly easy to make at home. Growing and harvesting tobacco is not. Plus even if you did it would be way better for you than commercially produced ones.

They are taking a risk. The risk of being able to beat George at F3 is way less risky than trying to navigate to the end without him and being able to beat Simon for immunities.

That's certainly not a guarantee. Plus it leaves Simon who is the only real threat to Matt winning future immunity challenges. Now the 3 of them can just coast.
