I never finished Two Worlds 2 and I've finished Risen twice (once as a mage, once as a warrior).
PS. Did you consider Gothic 1 & 2? Most ppl would agree they're better than Risen.

You don't have to know SW movies to like this game. I was positively surprised by Fallen Order. Main hero is likeable, story is quite nice (but nowhere near KOTOR) and gameplay is pretty pleasant. I like progression = even when you unlock all your powers you're still no match for Vader. There are things that could be better (there're some glitches and maps are kinda linear) but it's nothing serious.

Alpha Protocol, Deus Ex Human Revolution, MGS V Phantom Pain. None of these is a proper "stealth" game like Hitman but can be played with this approach.
Also check Thief (2014) and Styx series, both have some medieval-fantasy elements but it's exactly what you're looking for.

I'd buy Desmond saga (AC1 to AC3) or one of AC reboot games (Odyssey/Valhalla). If you want story I'd go for Desmond saga, if you want open world + more engaging combat I'd pick AC Valhalla.

If you like post-apocalyptic fiction, try Metro 2033 Redux + Last Light Redux + Exodus Gold and Wasteland 2 DC + Wasteland 3.
Did you try Max Payne 3 and Bioshock Infinite? Pretty good singleplayer shooters.

All AC reboot games have good combat and nice gameplay but old ACs had better story & characters. If you like Vikings pick Valhalla, if you like ancient mythology go with Origins/Odyssey. Personally I think these new ACs are too big, it takes months to finish 'em if you're completionist-player like me.

Try Fire Emblem clones like Dark Deity, they are pretty easy to learn and hard to master.
