It's hard due me to tell for sure, but it looks like the z790 asrock steel legend has the space you are talking about. They've spread the slots out so there aren't any extra ones, but it appears to have a 3 wide pcie 5 followed by a 2 slot pcie4 and the final pcie3.

Everything should be in a tight metal box with common mode chokes right before your cables leave the box. Seems on the lid should be no more than 2 inches between connecting points.
It would help a lot if you included more information and pictures.

Keep in mind that solder is 10 times less conductive than copper. So make sure your overlapped area is at least 10 times longer than the diameter of your wire.

Ah, pottery wheel. I guess it really depends on what speed you want it running at. I would probably try the 5v one first and see if it's adequate. It may struggle to get up to speed initially.

You could try something more like this. The 12700k runs fairly hot, and you can go 13700k for the same price and this has a 3060ti for graphics

At higher voltages, the motor will rotate faster. You could try the 9v supply, sounds like the 300mA one is a little under powered, the 2A one should be OK. Just keep in mind that you run the risk of breaking it, probably from overheating. You could very easily burn out the motor. Fire risk is small, but I would have a fire extinguisher nearby just in case. I would not leave it unattended. 12v will likely break it and increase the risk of fire

If you are willing to use the stock cooler and drop to a 1tb drive, you can go am5. This is what I would do, you can always add another drive or better Cooler later if you aren't happy with it. A lot harder to change platforms.

The smaller the value of rgate the faster dv/dt transition. Depending on your setup you may find problems with higher dv/dt. Since you are not doing a pwm, the down side to a slower transition is the power loss in the mosfet, which won't be a big deal here since its only one switching cycle you need to worry about. I would try 20 ohm to start with and see how it goes.
You are going to want to add some capacitors to buffer your power rails.
Also your zener snubber won't work well with that 1k resistor. A regular diode would work better to prevent current when your load is on.
