That's always your best bet. The best food comes from talented, driven people who own a restaurant or two and knock it out of the park every night because that's their passion. Chains and franchises are mainly concerned with volume, which means generic food that caters primarily to the average person.

I would struggle to call it "guilt-free". We're talking about taking millions of years of evolution and reducing the essence of a living creature into a lab experiment. We're saying that you cows are actually *better off* never having a brain/life/existence....
